As someone whose family has been connected with the sake business for generations, I was very much impressed with "Bringing shottsuru fish sauce back from the brink of extinction" in the Sept. 30 edition.
Some years ago, a friend of mine ran an izakaya bar and he always praised shottsuru sauce from Akita. He said that the fish sauce is the best for everything. I quite agree with him.
And it is very good and happy news that the proprietor's son is succeeding to the traditional family business. Sometimes, because of deregulation policies, to succeed to the family business is becoming difficult. I hope that the family will expand the business all over the world.
