After S'ayak has the disadvantage of being somewhat difficult to find. It is tucked away in a dark alley off a relatively well-patronized neighborhood shopping street lined with many cool little sake bars and eateries. You have to know it's there to find it.
It does, however, have the advantage of occupying a space with a long history as a bar. Six years ago it was known just as S'ayak -- a time during which Jamie Schmitz and his wife, Jasmine, used to drink there. "We didn't go there very often," says Jamie, "but the master was, I guess, asking everybody -- including us -- if they were interested in taking the bar over."
Jamie and Jasmine asked around among their friends and found several who were interested in joining the project, but only one -- Yuki Magoroshi -- showed the commitment required. Together the three of them launched After S'ayak.
