Tempura is probably the most internationally popular Japanese dish. It seems difficult to cook the dishat home, but actually, tempura is a very simple dish and tastes good with any kind of ingredients.
When I traveled abroad, I realized that tempura was the best Japanese recipe to demonstrate in front of foreigners. When I stayed in the Philippines, I made tempura with seafood, chicken and domestic vegetables for the host family. The tempura I made with chicken fillet, mushrooms, asparagus and zucchini was popular even among my Amish and Navajo Indian friends.
You don't need a special frying pan. Any deep pan will do. Chicken tempura is not from a traditional recipe, but when I made tempura in other countries, chicken was the most popular ingredient.
